Blood Sugar Spikes Are Not the Problem. Lipotoxicity Is.

I was standing in the sugar aisle when I overheard someone say, “Sugar spikes your blood sugar. That causes diabetes.”
This is the core of the anti sugar propaganda. A rise in blood glucose after eating is not dangerous. It is necessary. Without a rise, you would not deliver fuel to your brain, muscles, or organs. The spike means energy has arrived.
Let’s talk science. The glycemic index measures how fast a food raises blood sugar compared to pure glucose, which is 100. White sugar has a glycemic index of around 65. That is moderate. Similar to bananas and sweet potatoes. Lower than white bread and white rice.
Sucrose is half glucose and half fructose. The fructose portion goes to the liver and refills glycogen. It does not require insulin in the same way as glucose. This moderates the overall blood sugar response.
What matters more than glycemic index is glycemic load. That reflects the total amount of glucose entering the bloodstream. Watermelon, for example, can have a higher glycemic index but a low glycemic load because it is mostly water.
The real metabolic issue is lipotoxicity. When excess fat accumulates in and around cells, it interferes with glucose uptake. Glucose then stays elevated longer than it should. This prolonged elevation, what I call glucose drag, contributes to insulin resistance.
This is where I disagree with popular messaging from influencers like the Glucose Goddess. The focus should not be on avoiding spikes. The focus should be on reducing fat intake so glucose can enter cells efficiently.
On a low fat fruit based diet, aligned with SHINE Diet principles, glucose rises and falls smoothly. No fear. No drama. Just clean fuel.
Sugar is not the villain. Excess fat is. We are a low fat frugivore species designed to thrive on fructose based carbs.
Increase fruit. Lower fat. Build your Sugar Tank. End the fear.
